I suggest using fresh hearts of palm, though when not available, the canned version will suffice just fine by reducing the initial braising time to 10 minutes.

12 pieces Fresh hearts of palm, split length wise
1 bottle Chef Allen's passion fruit mojo
2 tablespoons olive oil
4 6 ounce salmon fillets
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cilantro leaves
Pre heat the oven to 375 degrees.
In a low sided oven proof dish arrange the hearts of palm and cover with 1 ½ cups of the passion fruit mojo. Braise the hearts of palm in the oven for 20 minutes until softened.
Season the salmon with salt and pepper. Then drizzle with olive oil. Place the salmon on top of the hearts of palm and return them to the oven for approximately 5 minutes, until the salmon are cooked and tender. Remove the hearts of palm and salmon to a serving plate.
Mix the cilantro, remaining mojo and any mojo cooking liquid left in the dish. Pour this mixture over the salmon.
