The Miami Spice is the secret to the flavor of this mango mojo.
2 6 ounce Grouper Fillets
1 teaspoon Miami Spice
2 tablespoons Olive Oil
1 small Diced shallot
2 tablespoons Freshly Squeezed Lime Juice
1/2 cup White Riesling Wine
1 tablespoon Fresh Minced cilantro
1 large Ripe Mango, Peeled & Diced
To Prepare The Grouper: Preheat the oven to 350 degrees. Season the fillets with spice. Warm the olive oil in a large ovenproof sauté pan on the top stove. Place the grouper in the pan and cook for 2-3 minutes browning the first side nicely. Add the shallot and turn the grouper over. Place the pan in the oven for 3-4 more minutes, until just cooked through.
To Finish The Mojo: Remove the grouper from the oven and place the pan on the stovetop again, over medium heat. Add the lime juice, white wine, cilantro and mango then remove the grouper fillets to a warm serving plate. Simmer the mojo for 3 minutes until the sauce is reduced by a 1/3. To serve pour the sauce over the grouper.
