Ingredients to Serve-4
1 pound Calamari, Tentacles removed, cleaned and split open
1 cup Tamarind Chili Spicy Grill Sauce
2 large Oranges, peeled, sectioned & diced
1 large Tomato, diced
1 small Sweet Onion, finely diced
2 large Jalepeno seeded, ribbed & diced
3 tablespoons Lime Juice
2 tablespoons Extra Virgin Olive Oil
3 tablespoons Chopped Cilantro Leaves
2 teaspoons Coarse Salt
1/2 teaspoon Ground Black Pepper
To Prepare the Calamari: Using a sharp knife cut open the calamari along the length of it and mark a criss-cross with the knife point on the inside flesh. This will tenderize the calamari. Combine the tentacles and bodies in a glass bowl and add ½ cup Tamarind Chili Grill Sauce. Set aside to marinate for ½ hour covered with plastic wrap.
To Prepare the Salsa: In a medium stainless steel bowl combine the oranges, tomatoes, onion, jalepeno, lime juice, oil, cilantro and salt. Mix well and set aside.
To Grill the Calamari: Preheat the grill to medium heat. Place the calamari bodies and tentacles on the grill. As the first side gets cooked it well probably curl up. Turn the calamari and grill the top side for approximately ½ minutes. Serve immediately with orange salsa and remaining grill sauce.
