Tzimmes is a Yiddish word that means "making a fuss" or "creating exitement about an event." Cooking a tzimmes, on the other hand, requires easygoing, slow cooking over low heat. Use a heavy-sided pot with a cover for this preparation.
Ingredients to Serve-6
2 cups sweet potato peeled 2-inch pieces
2 cups carrots peeled 2-inch pieces
1/2 cup diced onion
1 cup diced mango
1 cup diced dried mango
2 teaspoons minced ginger
2 bay leaves
1/4 teaspoon grated nutmeg
1 tablespoon kosher salt, plus extra to taste
1/2 teaspoon coarse ground black pepper, plus extra for taste
In a heavy-sided pot combine all the ingredients and enough cold water to cover them by 4 inches. Cover pot and bring to a very slow simmer. Cook for 1 hour, stirring occasionaly. Adjust the seasoning with salt and pepper. Let the tzimmes sit, covered, until ready to serve.
