Ingredients to Serve- 4
4 Large Red Rome Apples
1 8 oz Package cream cheese
2 Teaspoons Cinnamon
½ Box Somoa Girl Scout cookies
½ Cup Orange juice
To prepare the apples:
Using an apple corer or fruit baller, scoop out the core and seeds from the apple.
To prepare the filling:
In a small stainless steel bowl combine the cream cheese with the cinnamon. Crack the somoa cookies into the cream cheese mixture. Spoon the cookie and cream mixture into each of the prepared apples.
To bake:
Preheat the oven to 350 degrees. Place the apples in a small oven proof dish. Pour the orange juice into the bottom of the dish to keep the apple from scorching. Cover with aluminum foil and bake for 20 minutes. Check to see if the apples are soft. If not uncover and continue to bake for another 5 minutes until cooked through.
