Ingredients to Serve-10
10 large eggs, separated
1 cup sugar
1 1/4 cup matzo cake meal
1 tsp cinnamon
1/4 tsp all-spice
2 tbs chopped lemon zest
1 tbs chopped orange zest
1/3 cup orange juice
1 cup chopped almonds
1 pinch salt
1 cup guava jelly
To begin mixture: In a large stainless steel bowl beat the egg yolks and sugar until they form light ribbons. Mix the dry ingredients together the matzo meal, cinnamon, all-spice, lemon and orange zest. Fold this into the egg mixture and add the orange juice and chopped almonds.
To finish mixture: Whip the egg whites in a large bowl with the pinch of salt to form peaks. Fold the whites into the lemon cake carefully and completely.
To bake: Preheat oven to 350 degrees. Prepare a Teflon baking pan with vegetable spray. Pour the mixture into the mold and bake for 50 minutes until done. Remove it from the oven and remove from the pan to cool.
To finish: When completely cool, cut the loaf in thirds lengthwise. Then spread the guava jelly on two of the thirds evenly. Stack all three back together to reform the loaf Refrigerate for one hour before serving.
