The mango has many tropical flavors and aromas. It tends to melt into the spice mixture of sweet and heat. This freshing chutney can accompany meats, fish and poultry.
Ingredients to Serve 3 cups
1 cup Packed brown sugar
½ cup Cider vinegar
1 medium Onion, chopped
3 cloves Garlic, minced
2 tablespoons Minced fresh ginger
1 small scotch bonnet, seeded and minced
2 Tablespoons Garam Masala
2 teaspoons Kosher salt
4 large Ripe mangos,diced
1 large Lime, juice freshly squeezed
1/2 cup Golden Raisins
To Prepare the Chutney:
In a large saucepan, combine the sugar and vinegar. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Add the onions, garlic, ginger, chile, garam masala and salt. Return to a boil, then decrease the heat and simmer, uncovered, for 5 minutes. Add the mangos, lime juice, and raisins. Cook for another 45 minutes, or until the mixture reaches the consistency of marmalade. Spoon the chutney into hot, sterilized jars and seal each jar with an airtight cover.
