The Brick is a farm-to-table style restaurant that prides itself in giving guests an at home around the dinner table, sharing food with family and friends experience.
This was the first ownership experience for Corey Bousquet, who had over 15 years working experience in hospitality. He was clearly ready to work hard to differentiate the Brick. The challenge came to design and create an inviting community restaurant space and to find local farmers and artisan suppliers. Then to put this all together with creative and passionate culinary team.
With the open kitchen allowing guests to see fresh ingredients become soulfully comfortable dishes from start to finish all the while maintaining a genuine farm to table approach through seasonal and fresh ingredients, Corey has taken The Brick to one of the city’s most delectable and notable outposts for the slow food movement.
